Finding simple but tasty clean weeknight meals has been a bit of a challenge for us. One major downside to the 45-day reset is that there aren’t any standard “throw it in the oven for 20 minutes and call it a day” meals, like pizza or hot dogs. Which, of course, is good for our health, but bad for days when my laziness and/or busyness takes over and I just don’t want to cook anything.
Hobo pies to the rescue
Then along came my easy weeknight meal in shining armor, aka Luke. This Father’s Day, Luke decided he wanted to make dinner with the boys. His family used to go camping all the time when he was growing up, and one of their stand-bys was cooking up hobo pies over the campfire or camp stove.
If you’ve never had hobo pies before, they’re super easy to make and really kid-friendly too. You basically mix raw ground beef with your choice of veggies, pour some water over it, wrap that sucker in tinfoil and then either grill or bake it. My recipe is for baking, since that’s what we did.
Some ideas for veggies include parsnips, broccoli, green peppers, mushrooms and black olives, (at least, those are all the veggies we used). Carrots, onions, scallions, sweet potatoes, zucchini, squash–pretty much any vegetable would work in here, which makes it perfect for a fast weeknight dinner. Just throw together what you have on hand (even if the veggies are canned or frozen) and call it a day! We took the kids to the produce aisle and let them pick out their favorites for this particular venture, but in the future I’ll definitely use this as a “cleaning out the fridge” dinner. Then they got to create their own dinners! (Read—they did all the work so I didn’t have to, AND they couldn’t blame me if they decided they didn’t want to eat it. Double score.)
They of course immediately doused their healthy dinners in bbq sauce, but hey, at least they got some nutrients in there, underneath all that sugary goodness.
- 2 pounds ground beef
- 1/2 t salt
- 1/2 t pepper
- 1-2 t steak seasoning
- 1 cup chopped veggies of your choice
- 1/2 cup water
- Aluminum foil
- Preheat oven to 375 degrees
- Cut out a large piece of aluminum foil
- Wash and chop veggies
- Place 1/2 pound ground beef per in the middle of your foil
- Mix in your favorite chopped veggies
- Pour water over the meat/veggie mixture
- Fold your foil over the mixture so it's a packet
- Place packet on a cookie sheet and put in the oven for 30 minutes
- Unfold your packet, eat and enjoy! This is great on its own, but a little bbq sauce doesn't hurt!
